Ippudo is one of the most famous ramen chains in the world — originating in Fukuoka, Japan and bringing Hakata-style tonkotsu to a global audience. The American locations are concentrated in California, and each delivers the signature thin, straight noodles in a deeply developed pork bone broth that's lighter in color than Kumamoto-style tonkotsu but every bit as satisfying. I've eaten at the San Francisco location on Yerba Buena Lane multiple times — it's one of the best bowls in a city with excellent ramen options. The sesame noodle, served cold with a rich sauce, is one of Ippudo's signature innovations that's worth ordering on its own.
