You come in after the casino floor has drained your energy, and the tonkotsu broth is basically medicine. Ton Shou on Spring Mountain is one of the best katsu and ramen joints I've ever sat at — no hype, just flawless execution. Vegas ramen isn't about the tourist strip. It's about Spring Mountain Road, Nevada's own J-town, where the spots open late and the clientele is mostly locals and industry workers who know exactly what they want.
