Spicy Buldak Ramen Recipe
By Marcus Rivera
Inspired by Korea's famous fire noodles, this spicy buldak ramen coats chewy noodles in a fiery, garlicky, gochugaru-based sauce that clings to every strand — no watery broth here. It's ready in about 15 minutes and built for genuine heat-seekers.

Why You'll Love This Recipe
- Real, fiery Korean fire-noodle heat you can make at home in 15 minutes.
- The sauce clings to every noodle instead of pooling in a watery broth.
- The melted cheese trick lets you dial the heat back exactly how you like it.
Ingredients Needed
- 2 packs ramen noodles (seasoning packets discarded)
- 3 tablespoons gochugaru (Korean chili flakes)
- 2 tablespoons gochujang
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 tablespoon vegetable oil
- 1 tablespoon grated garlic
- 2 tablespoons reserved noodle cooking water
- 1/2 cup shredded mozzarella cheese (optional, to cool the heat)
- 1 scallion, thinly sliced
- 1 teaspoon toasted sesame seeds
How to Make Spicy Buldak Ramen
- 1Bring a pot of water to a boil and cook the ramen noodles for 1 minute less than the package directs — they should be very slightly underdone. Reserve 2 tablespoons of the cooking water, then drain.
- 2While the noodles cook, whisk together the gochugaru, gochujang, soy sauce, and sugar in a small bowl.
- 3Heat the vegetable oil in a skillet over medium heat. Add the garlic and sauté for 30 seconds, until fragrant.
- 4Add the gochujang mixture to the skillet along with the reserved noodle water and stir to combine into a thick sauce.
- 5Add the drained noodles to the skillet and toss vigorously with tongs until every strand is coated in the fiery sauce, about 1–2 minutes.
- 6If using, sprinkle mozzarella over the noodles right in the skillet and cover for a minute to melt, which helps mellow the heat.
- 7Divide between bowls and top with scallion and sesame seeds. Serve immediately.
What to Add
Make it your own — here are a few ways to customize this bowl.
Protein
Sliced grilled chicken, crispy tofu, or a fried egg on top rounds this out into a full meal.
Cooling contrast
Extra melted cheese or a drizzle of Kewpie mayo helps tame the heat.
More heat
An extra spoonful of gochugaru or a few slices of fresh Thai chili pushes the spice further.
Crunch
Crushed roasted seaweed snacks or toasted sesame seeds add texture on top.
