Why You'll Love This Recipe
- Real gochujang heat in a fully vegetarian, protein-packed bowl.
- Crispy pan-seared tofu gives satisfying texture alongside the spicy broth.
- Easy to adjust the spice level up or down to taste.
Ingredients Needed
- 14 ounces firm tofu, pressed and cubed
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 tablespoon grated ginger
- 1 tablespoon grated garlic
- 2 tablespoons gochujang
- 1 tablespoon gochugaru (Korean chili flakes)
- 5 cups vegetable broth
- 2 tablespoons soy sauce
- 8 ounces ramen noodles
- 1 cup bean sprouts
- 2 scallions, thinly sliced
How to Make Spicy Tofu Ramen
- 1Toss the cubed tofu with the cornstarch until lightly coated.
- 2Heat the vegetable oil in a nonstick skillet over medium-high heat. Add the tofu in a single layer and pan-sear until golden and crisp on all sides, about 8 minutes. Set aside.
- 3In a pot, sauté the ginger and garlic in a splash of oil for 30 seconds, until fragrant.
- 4Stir in the gochujang and gochugaru and cook for 1 minute to bloom the spices.
- 5Pour in the vegetable broth and soy sauce, bring to a simmer, and let cook for 10 minutes so the flavors come together. Taste and adjust the heat.
- 6Cook the ramen noodles separately according to the package instructions, then drain.
- 7Divide the noodles among bowls, ladle the spicy broth over the top, and arrange the crispy tofu, bean sprouts, and scallions on top.
What to Add
Make it your own — here are a few ways to customize this bowl.
Cooling contrast
A soft-boiled egg or a drizzle of sesame oil helps balance the heat.
Extra vegetables
Mushrooms or baby bok choy simmer well in the last few minutes.
More heat
Fresh sliced Thai chilies or extra gochugaru push the spice further.
Crunch
Crushed peanuts or toasted sesame seeds add texture on top.
