Hokkaido Ramen Santouka is a Japanese import that's brought Hokkaido-style shio and toroniku ramen to the American market. The brand originates from Asahikawa, Hokkaido — the same region that developed the milky, butter-forward ramen style that's distinct from Fukuoka's tonkotsu or Tokyo's shoyu. I've eaten at the Bellevue location multiple times, the University Village Seattle spot, and the Edgewater, New Jersey outpost. The shio ramen here is the thing to order — clean, subtle, deeply comforting. The toroniku (braised pork cheek) is exceptional.
