Kizuki Ramen & Izakaya is the Pacific Northwest's native ramen chain — born in Seattle and expanded thoughtfully across Washington, Oregon, Texas, and Indiana. I've sat at the Capitol Hill location at midnight after a show, at the Bellevue Square location with my laptop on a Tuesday afternoon, and at the Katy, Texas outpost on a road trip through the Gulf Coast. Kizuki's signature is restraint — the broths are clean, technically precise, and balanced. The izakaya small plates are genuinely excellent and worth ordering alongside whatever bowl you choose. The chicken paitan here is one of the best I've had from a chain restaurant.
